Emulsifier for oils in the cheesemaking process. Sodium Citrate allows cheese to melt without becoming greasy.
Directions for gooey cheese: Use at 3% (w/w).
Meaning if you have 100g of cheese, you will need to add 3g of Sodium Citrate.
