CLOUDY WITH A CHANCE OF HAZE (NEIPA)

Brewing Instructions.

(1) GRAINS:- Add bag of grains to about 5 litres of cold water in a large stock pot, and then slowly bring to the boil. Turn off heat immediately and remove the bag of spent grain. If possible, sparge the grain bag with about a litre of boiling water. ( we recommend that the time taken to bring to the boil be up to 30 minutes.)
(2) MALT/SUGAR PACK:- Thoroughly dissolve the malt/sugar pack in the hot wort and then bring back to the boil. Simmer boil for 10 minutes, and then add the finishing hops. Continue the boil for a further 1 minute, and remove from heat.
(3) COOLING:- Immediately after removing from heat, cover the stock pot and place in a sink of cold water for approximately 30 minutes. Change the water in the sink a couple of times as it warms up.
(4) SANITIZE:- While the wort is cooling, sanitize your fermenter and all the equipment that you will be using to prepare for fermenting.
(5) BEER PACK:- Boil a kettle of water for dissolving the beer pack. Open the can of “Deliverance” and pour into your fermenter, scraping most of the concentrate out. Fill the can with boiling water and leave for a couple of minutes to soften. Pour into the fer-menter and then use another half a litre of hot water to wash the can out. Stir to dissolve completely.
(6) COOLED WORT:- Strain cooled wort through a kitchen colander or pasta sieve into your fermenter, and then top up to 22.5 litres with cold water. Stir well, splashing the wort to introduce oxygen.
(7) FERMENTING:- Check wort temperature and, if below 30C, pitch yeast. Fermenta-tion should start within 6 hours, and should continue for 5 to 10 days.
(8) Add Dry Hops to fermenter on day 3-5 of fermentation. (High Krausen).
(9) BOTTLING:- Bottle or keg as normal, and condition for at least 3 weeks.

Yeast Recommendation: Lallemand New England, Lallemand Verdant IPA or Bluestone New England.
Also Required: A can of Deliverance Wheat Beer.
